6 AS A STARTED OR PART OF A NIBBLE PLATTER

210g can naturally smoked salmon, drained and any larger bones or dark skin discarded
250g crème fraiche
juice of 1 lemon
3 spring onions, finely chopped
1 tablespoon chopped dill
pinch of cayenne pepper

To serve

salt and freshly ground black pepper
toasted bread
gherkins, sliced (optional)

• Place all the ingredients into the bowl of a food processor. Pulse until just combined. Season to taste. Serve with toasted bread and sliced gherkins, if desired.
